Southwest Chicken & Rice Soup Recipe – Cooking at Home with Cowboy Chicken

As part of our Cooking at Home with Cowboy Chicken initiative, Chef Eddie Russell crafted a Southwest Chicken Soup utilizing Cowboy’s rotisserie chicken. We had one of our team members try out the recipe at home. Below are the results. Enjoy!

It was really good! Very flavorful and the toppings were surprisingly good. I wouldn’t have thought to add radishes so I was pleasantly surprised that I liked them so much.

It was very easy and quick to make, plus it was VERY affordable! Besides the chicken I only spent $10 on ingredients. Win win win!

But the real kicker was adding the Cowboy Chicken Hot Sauce. So good!
